Pickle fish

A simple dish that can be made ahead of time.
You can use fish cutlets or whole fish.
Fry fish and meanwhile make the:
Vinegar sauce
Deep fry sliced garlic (do not burn garlic slices). Remove to paper lined plate.
Remove oil from pan or pot. Add fish sauce ( or salt) , vinegar, sugar and water.
Boil and taste…should be sour and sweet and salty. Adjust seasoning.
Add the sliced ginger and chillies. Take the pot off the stove.
Plate fried fish and
Pour the vinegar sauce over the fish. Top with the fried sliced garlic.
