Snow peas and chicken breast


The chicken breast I had saved from the chicken soup meal the previous day was stir fried with snow peas. The breast was sliced and marinated with fish sauce and cornflour. I used fish sauce as I wanted to retain the white color of the meat. First cook the snowpeas in a hot wok with little oil. Stir and cover and do not over cook. Dish out. Heat oil in the same wok and add the sliced ginger (or garlic or shallots–aromatics of your choice) and stir the meat. When cooked add some cornflour slurry and then stir in the snowpeas.
