Braised belly pork with hard boiled eggs
My favourite stand-by dish is braised pork belly. Cut the belly strips into chunks. Marinate the pork with soy, smashed spring onions (include the white ends), fresh lemon grass from the garden(optional), garlic and star anise.
Heat the pot with bit of oil and then fry the marinated pork. Add mirin and more soy. Then add water and simmer till tender. Add shelled hard boil eggs to the pot.
I make a simple stir fry savoy cabbage to accompany the dish.
Sometimes it is just a a vinegared cucumber dish.
