Snake beans with ikan billis


This is one of Kevin’s favourite dish. I used snake beans but french beans can be substituted. First cook the beans in a bit of oil, garlic, salt and water until just tender. Plate the beans. Heat some oil for deep-frying the ikan billis. In the mean time wash the ikan billis and strain off water. Best to do this just before you fry them. Otherwise the little fish will not be crunchy and crispy. Strain and then  top the cooked beans with the fried ikan billis and chillies. This way you can keep the crunch of the fried ikan billis.
