Fish baked with home made curry paste


I had no idea how I was going to cook the couple of fish we bought at the Belconnen markets. I found some left over curry paste that I made for the massaman beef curry. I salted the fish, then inserted some paste in the stomach  and rubbed the rest all over the fish. The fish were laid onto an oiled aluminium piece of foil. Then top it with sprigs of curry leaves before sealing the  package. It was left to cook in the oven at 225 for 40 mins. If you going to make this, you have to adjust the cooking time according to the size of fish. I was surprised it came out well and tasted like the Malaysian fish head curry.
