Lamb, zucchini, beans stew or soup

What to do with zucchinis when they over produce. Need to think of different ways of cooking them.
I slow cooked some chump lamb chops with finely chopped onions, cloves of garlic, rosemary and bay leaves. Do not use too much water to cook the meat as you want the soup to be robust. I cooked the white beans in a pressure cooker. When the chops were done, the herbs and meat were removed. The liquid was strained and returned to a clean pot with meat. Salt to taste,  add the small cubes of zucchini  and cooked gently. The beans were added when the zucchinis were tender.  Chop fresh coriander, garlic, chillies together and add grated lemon zest and the lemon juice. This were added as topping for the soup or stew. This is really a  good nutritious soup.
